Plant Plot Update August 3 2024


I was thinking about the fried chicken and mashed potatoes. 

Side Note: I totally forgot there would also be coleslaw. 

So as I was thinking about the heavy-luscious fried and buttered goodness ahead, I was also thinking about what I might be able to contribute on the fresh side that might help provide balance to the meal.

I had cucumbers on the counter (for an embarrassing amount of time) that were calling my name. 

And it dawned on me that the dill was finally robust enough to start harvesting ... our recent rains made sure that it was full and healthy. 

Cucumber salad for the win! It checked the boxes of fresh and tangy to help balance the fattiness of the mains. It also ensured that all of the cucumbers would FINALLY be used. 

I sliced the cukes with a mandolin. Salted and pressed them. Tossed them in a bowl. Added some thinly sliced onions as well. And fresh ground black pepper, greek yogurt, a few drops of CPTG lemon essential oil, a bit of fresh thyme (from the garden too) -- and lots and lots of dill. 

IT WAS DEFINITELY A WIN! 

Not pictured, but I also brought some garden fresh cantaloupe to the family meal. 

I love the way the garden contributes to a full table.
